Cheesecake Bars GF

It's been awhile since I have done any gluten-free posts but it is a big part of my life as I love food and baking and I was diagnosed with Celiac Disease 19 years ago. I'm sorry this isn't a great photo but I realized I didn't have one and the dessert was quickly disappearing. I came up with this recipe when I needed to make something for a party and didn't really want to go to the store. We had a ton of fresh berries from our neighbor but not enough to do a cobbler but we did have cream cheese. I tweaked a pecan crust recipe I have used for awhile and combined it with a cheesecake filling I also changed and the result was a big success. 

Pétra's Cheesecake Bars GF!

2 Eggs
16 oz Cream Cheese softened 
1/2 cup Sour Cream
3/4 cup Sugar
1 teaspoon Vanilla

2 1/4 cups Pecans 
2/3 cup Sugar
1/4 teaspoon Cinnamon 
2 tablespoons GF flour mix
1/4-1/2 Butter melted

Preheat oven to 350 degrees. 
Grind nuts in a food processor to a fine chop but not meal. Add all the dry ingredient's and pulse to blend. Transfer to a bowl and stir in melted butter. Depending on the flour mix you use (I used a little Pamela's pancake mix) and natural oils in the nuts you may choose to add more melted butter until the mix holds shape well. Pat mixture into a 9x13 cake pan and chill in the fridge while you make the filling. 
To help with lumps in your cream cheese smoosh it with a spoon or spatula in the bottom of a medium size bowl. Next add all the other ingredient's and blend with a mixer on medium speed until smooth. I've made this a few times and once I did have small lumps but they disappeared with baking so don't worry if you have some.
Pour filling into prepared crust pan and bake for 35-40 minutes. Middle will puff up when it's ready. Remove from oven and cool. Top with your favorite berries, a drizzle of caramel or nothing at all. Enjoy!

I will try your recipe, I am a huge cheese cake fan. But the problem is that I cannot eat sugar I am a borderline diabetic(or prediabetic)........

i didn't know you have celiac. we are getting my husband tested right now. he has a sister and a cousin that have it. he has been so sick off and on that we are kinda hoping that is what it is...

It runs in my family as well, I think that's why I was able to get diagnosed so early on and was only sick for a little bit. Good luck and let me know if you need recipes!
